Roasted Veggies

Roasting vegetables may be a little more complicated than people give it credit for. In this episode of Fired Up Food, Nate Uri shows us how to whip up a variety of vegetables on the grill--great for camping or at home. He uses them to make amazing steak fajitas, but they would also be a great side dish with split whole chicken or pork chops and slaw. Roasted Vegetables

Serves 4

INGREDIENTS

  • 1 Bunch of scallions
  • 1 Large bell pepper
  • 3 Cremini Mushrooms
  • 2 Medium Zucchini
  • Olive oil
  • Sea Salt
  • Maggi Seasoning

METHOD

Slice the Peppers, Zucchini and Mushrooms lengthwise. Top the Scallions and cover all the vegies liberally in olive oil and sprinkle with Sea salt. Place the all the vegetables on the fire great over a bead of medium coals. Watch and turn the vegetables as kneaded you just want to cook the vegetables till lightly roasted. If the veggies will be used in fajitas, season with Maggi Seasoning to taste. Serve warm.
